Kitchen Ventilation design
Kitchen ventilation is having a major role of kitchen hood to maintain proper condition. Kitchen hood is equipment which required design 25% higher in size to cover all steam generating surfaces. Second most important part is designing velocity across hood opening & steam generating surfaces. It should not be below 100. All grease, oil, Sault & other harmful particles which will reduce the all exhaust equipment life can be removed with the help of grease filters. Grease filter is having zig- zag path for collected steam with air by the hood. If any two metal particle is having less than 10mm gap and this gap is passing air with steam then sweating will happen and this sweating will carry all harmful particle with him and settled at the bottom which can be drained properly.
